Cima opening at The Westin Riverfront
Award-winning resort now featuring a Contemporary Latin Kitchen by Chef Richard Sandoval
The Westin Riverfront Resort & Spa at Beaver Creek Mountain is pleased to announce that Cima, a Contemporary Latin Kitchen by Chef Richard Sandoval, is opening this month at the award-winning resort.
Cima – which is Spanish for peak or summit – is the latest concept by Richard Sandoval Restaurants, which operates 30 restaurants in several states and three foreign countries, including several hotel restaurants such as the award-winning Raya at The Ritz-Carlton Laguna Niguel in California.
Chef Sandoval – famous for his contemporary interpretations of Latin cuisine - was inspired by the Vail Valley's active lifestyle when crafting menus for Cima. Infused with Sandoval's vibrant Latin flavors, the lunch, dinner and Latin brunch offerings are replete with fresh market produce, sustainable seafood, locally raised meats and specialty products from local purveyors.
With selections of Tequila, Pisco, Cachaca and other regional liquors, Cima's bar is a showcase for Latin spirits. Guests may sip their selections or choose from fresh, hand muddled cocktails. Hora Feliz (Happy Hour) will be offered daily in the bar for guests coming in off the slopes or up from the spa.

Richard Sandoval Restaurants also operates Tamayo and La Sandia in Denver as well as Venga Venga, a “Cantina and Tequila Bar” in Colorado's Snowmass Village.
Richard Sandoval Restaurants will also take over service at the Lobby Wine Bar, the pool, and all banquets and catering operations.
